Tasting Note
Fresh red cherries and raspberries with dried herbs, cured-meat and balsamic hints; pronounced volcanic minerality, lively acidity, subtle spice and feathery tannins, finishing persistent and saline.

Roast lamb, grilled beef, pork, mushroom risotto, tomato-based stews, Spanish tapas and cured meats; Asian pairings: char siu, teriyaki chicken, Korean BBQ, grilled tuna, mushroom stir-fries, mildly spicy Sichuan dishes.

Production Method
Hand-harvested Listán Negro; indigenous-yeast fermentation in open vats; malolactic in 500L Allier French oak; aged 10–11 months in 500L and 228L French oak puncheons; minimal intervention.

Suertes del Marqués (founded 2006) produces small-batch wines from 11 ha. El Chibirique is from a 0.4 ha parcel of 60–80 year-old vines on braided cord in volcanic soils at ~400 m.
