Tasting Note
Luscious honeyed apricot, orange marmalade, candied citrus, beeswax and saffron; pronounced botrytis character, toasted almond and lanolin notes, viscous texture and a very long, honeyed, gently bitter finish.

Foie gras, blue cheese (Roquefort), almond or apricot tart, crème brûlée; Asian: rich Cantonese roast, Peking duck, mildly spicy Thai or Korean dishes, sweet-savory Indian curries.

Production Method
Hand-harvested in multiple successive selections (tries) for botrytised fruit; fermented and barrel-aged in French oak (high percentage new oak, ~70% in 2022) for 18–24 months to build richness and balance.
