Tasting Note
Honeyed apricot, orange marmalade and candied pineapple with saffron, ginger, toasted almond and vanilla; viscous and opulent yet lifted by bright acidity and a long mineral-honey finish.
Food Pairing
Western: foie gras, blue cheeses (Roquefort), fruit tarts, crème brûlée; Asian: Peking duck, Cantonese roast pork, spicy Thai curry or Szechuan dishes to contrast sweetness.
Production Method
Hand-harvested in repeated 'tries' to select botrytised grapes (Botrytis cinerea); fermented partly/wholly in oak barriques and aged ~20 months (≈50% new oak). Residual sugar c.145 g/L.
