Tasting Note
Aromas of white flowers, pear, mandarin and candied citrus with honeyed and hazelnut hints. Creamy, elegant texture with bright acidity, subtle oak spice and a long, saline-citrus finish.
Food Pairing
Western: grilled scallops, lobster, roasted chicken, creamy seafood pasta, soft cheeses. Asian: sashimi/sushi, miso-glazed black cod, Thai green curry (moderately spicy), Cantonese steamed fish or roast pork.
Production Method
Gentle pneumatic pressing, cold settling, fermentation in barrels and wineglobe (partial new oak), no malolactic fermentation, aged on fine lees with regular stirring for ~9 months.
