Tasting Note
Cool-climate Cabernet with crushed mint herbaceousness, blackcurrant and blueberry fruit, violet and lavender notes, fine dark-chocolate oak, firm fine tannins and bright acid, long layered finish.

Western: grilled ribeye or roast lamb, braised beef short ribs, aged cheddar and dark-chocolate desserts. Asian: Korean barbecued beef (bulgogi or galbi), Cantonese char siu, miso-braised eggplant, spicy Sichuan beef or Thai basil stir-fries.

Hand-harvested; small-batch, open fermentation with hand-plunging, matured ~24 months in French oak, bottled unfined/unfiltered and finished under screwcap.
