Tasting Note
Pale straw with citrus and white stone-fruit (lemon, nectarine), struck-match minerality and saline oyster-shell notes. Textured palate with lemon-meringue richness, hazelnut cream and bright, racy acidity leading to a long, focused finish.
Food Pairing
Western: oysters, grilled salmon, roast chicken with herb butter, creamy pasta, mild goat cheese. Asian: sashimi/sushi, miso-glazed cod, tempura prawns, yakitori, lightly spiced Thai or Vietnamese seafood dishes.
Production Method
Hand-picked; whole-bunch pressed to French oak and concrete for fermentation. Wild/ambient ferment in 500L French oak (approx. 20% new), full malolactic, 8 months in barrel, minimal lees stirring before blending and bottling.
Vineyard Info
