Tasting Note
Inky blue-black fruit: mulberry, blackberry and blueberry with blood-plum, violets, dark chocolate, anise and ironstone. Chalky, powdery tannins with focused acidity and an exceptionally long, textural finish.

Grilled ribeye or lamb rack, roasted venison, beef short rib; aged cheddar and dark chocolate. Asian: Korean BBQ (bulgogi or galbi), char siu, beef rendang, Sichuan pepper beef, miso-glazed aubergine.
Production Method
100% Shiraz from the Schubert vineyard; a high proportion (~70%) whole-bunch fermentation, parcels vinified separately (some in concrete eggs) then basket-pressed and matured in French oak (approx. 30 months).
