Tasting Note
Inky black/blue fruits, plum and blackberry with violet, anise, dark chocolate and saline earth. Dense, juicy core with plush, powdery tannins and a very long, chewy finish.

Grilled ribeye, slow-braised short ribs, lamb shank, aged cheddar; Asian: Korean BBQ (bulgogi/galbi), char siu, spicy Sichuan beef, hoisin duck, teriyaki-glazed dishes.
Production Method
Approximately 70% whole-bunch fermentation; parcels matured in new and used French oak (many for ~30 months) with a portion aged in concrete egg to preserve blue-fruited purity. Basket-pressed prior to élevage.
