Tasting Note
Opaque black-purple. Intense blackberry, blueberry and dark plum compote with violet, pomegranate, cocoa and a savory bacon-fat note. Concentrated, plush fruit framed by fine powdery tannins, lively mineral acidity and a long, saline-spiced finish.
Food Pairing
Western: charred lamb racks, roast beef, venison, aged cheddar, mushroom risotto. Asian: Korean BBQ (bulgogi), Chinese char siu, Sichuan beef stir‑fry, braised short ribs with hoisin, grilled miso aubergine.
Production Method
Co-fermented Shiraz with ~1–2% Viognier skins, some whole‑bunch inclusion, native yeast fermentation and maturation in French oak barrels; minimal intervention.
