Tasting Note
Fragrant dark-plum, black cherry and blackberry with violet florals, blood-orange/Chinotto lift, black tea, Szechuan pepper, sandalwood and cocoa; mineral, savoury core, fine graphite tannins and a long, silky finish.

Food Pairing
Grilled or roast lamb, aged beef, mushroom risotto, truffled dishes; aged hard cheeses. Asian pairings: Peking duck, char siu pork, Korean BBQ, beef bulgogi, Cantonese roasted meats, spicy Sichuan dishes.

Production Method
100% whole-bunch ferments with native yeasts, minimal intervention; small open vats/concrete eggs for parcels; extended élevage in French oak (c.18–22 months); bottled under natural cork and wax.

Made by Dan Standish (The Standish Wine Company), a sixth‑generation Barossa vigneron. Fruit from Hutton Vale Farm and the historic Stonegarden block in Eden Valley; site-driven, old‑vine Shiraz focus.
