Tasting Note
Jasmine tea and bergamot lift above raspberry, pomegranate and black/blue fruit, with sage, graphite, star anise and black tea. Concentrated, textural with fine-grained skin/stalk tannins and a long, savory mineral finish.

Food Pairing
Chargrilled ribeye, roast lamb, aged cheeses, mushroom risotto; Korean BBQ (bulgogi), Chinese red-braised pork, Sichuan-style beef, Peking duck, grilled miso eggplant.

Production Method
100% whole-bunch ferments on wild yeasts in small open vats; matured 18–22 months in French oak. Minimal intervention: no fining or filtration, natural cork.
