Tasting Note
Inky, dense black-fruit core of blackberry, black plum and cassis with violet florals, black pepper, cigar-box spice and vanilla. Silky, voluminous texture, firm mouth-coating tannins and a long savory finish.

Food Pairing
Western: grilled ribeye, braised short ribs, barbecued ribs, aged cheddar and mushroom ragù. Asian: Korean BBQ (bulgogi), char siu (Chinese BBQ pork), Peking duck, spicy Sichuan beef, Korean galbi.

Production Method
Short maceration (≈9–12 days) with fermentation on skins; aged ~14–15 months in American oak (≈19–25% new); blended with small amounts of Rhône varieties.
