Tasting Note
Dark cherry and plum with red-berry perfume, rose petal and baking spice. Mid-full body with smooth, rustic tannins, tobacco leaf, dark chocolate and a savory, long finish (sage/earth).

Grilled ribeye, roast lamb, mushroom risotto, aged cheddar; Asian pairings: Peking duck, char siu, beef bulgogi, miso-glazed eggplant, Korean BBQ.

Production Method
Two–three week maceration; fermented in stainless and neutral oak; aged 19 months in French oak (38% new).
