Tasting Note
Warm spice and sweet oak with hints of mint and sage. Layers of raspberry, red currant, blackberry, black cherry and vanilla; floral undertones of rose and violet. Silky texture, integrated tannins and a spicy, floral oak-driven finish.

Food Pairing
Western: grilled ribeye, roast lamb, mushroom risotto, braised short ribs. Asian: Korean BBQ (bulgogi or galbi), char siu pork, Sichuan beef, soy-ginger glazed salmon or yakitori-style grilled meats.

Production Method
Fermented with daily lot tasting and controlled pump-overs; extended maceration (3–4 weeks). 25% matured in new French oak, remainder in neutral French and American oak; aged 19 months before bottling.
