Tasting Note
Dense blackberry, black cherry and plum with violet and baking spice; savory hints of leather, tobacco and cocoa. Polished tannins and integrated oak give a long, spicy finish.

Food Pairing
Western: grilled ribeye, roasted lamb, beef ragù, aged cheddar. Asian: Korean BBQ (bulgogi), Sichuan-style beef, Peking duck, char siu or teriyaki beef.

Production Method
Estate fruit blended lots fermented separately, aged ~18–20 months in French oak (approx. one-third new), racked and blended before bottling.
