Tasting Note
Dark, multilayered black-fruit core—blackberry, blueberry and macerated strawberry—with hints of chocolate, espresso, black olive and cinnamon; silky, mouth-pleasing tannins and a long, mineral-tinged finish.
Food Pairing
Western: grilled ribeye, braised short ribs, lamb chops; Asian: Korean BBQ (bulgogi), Cantonese roasted duck, miso-glazed eggplant or char siu pork.
Production Method
Estate-grown blocks vinified separately, blended from top barrels and aged ~20 months in French oak (about 50% new); traditional fermentation and barrel maturation.
