Tasting Note

Bright citrus and passionfruit with kaffir lime, grapefruit and fresh herb notes. Juicy, crisp acidity, a mineral/saline mid-palate and a long, lively finish.

Oysters, ceviche, grilled white fish, lemon-herb chicken, goat cheese, arugula salad; sashimi, sushi, ponzu-dressed dishes, Thai green salad, spicy Korean stews (nabemono) with citrus/soy accompaniments.


Production Method

Hand-harvested, gentle pressing and cold settling; fermented primarily in stainless steel with aromatic yeasts, short lees contact; blended and bottled under screw cap.
