Tasting Note
Bright red cherry, raspberry and cranberry with plum, subtle vanilla, cinnamon and thyme spice; floral and mineral undertones, fresh acidity, silky, lightly chewy tannins and a moreish, medium‑long finish.

Western: roast duck, roast pork, mushroom risotto, grilled salmon, charcuterie and soft to medium‑aged cheeses. Asian: Peking/hoisin duck pancakes, teriyaki salmon, miso‑glazed eggplant, Korean BBQ, mild Thai or Indian curries.
Production Method
Hand‑harvested from multiple vineyard blocks; parcel-fermented (some natural ferments), matured about 9 months in French oak (predominantly older/neutral barrels), blended and bottled under screwcap; sustainably farmed.
