Tasting Note
Bright red cherry, raspberry and plum with cinnamon, clove and subtle forest-floor earthiness. Fresh acidity, fine tannins and medium body lead to a layered, spicy, and slightly saline finish.

Western: roast duck, mushroom risotto, pork belly, charcuterie, aged cheddar. Asian: Peking duck, teriyaki salmon, Korean bulgogi, hoisin pork, miso-glazed eggplant.
Production Method
Hand-harvested estate and selected site fruit; mostly destemmed and fermented in open-top vats with gentle plunging; pressed and matured 9–11 months in French oak before bottling under screwcap. Sustainable, vegan-friendly practices.
