Tasting Note
Bright red cherry, raspberry and pomegranate with spice, dried herbs and subtle cedar; fresh acidity, silky tannins and a lingering, elegant finish.

Western: roast duck, mushroom risotto, pork loin, charcuterie, aged cheddar. Asian: Peking duck, teriyaki salmon, char siu pork, soy-glazed mushrooms, yakitori.

Production Method
Hand-picked fruit, small-batch/open-top fermentation, matured ~11 months in French oak barrels before blending and bottling.
