Tasting Note
Deep salmon-to-garnet pink. Intense red-berry and cherry aromas with rhubarb, violet, rose petal, and subtle brioche. Velvety mousse, concentrated fruit, crisp acidity and a long, savory finish.

Western: roast pork, duck breast with cherry sauce, creamy risotto, charcuterie, goat cheese tart. Asian: Peking duck, salmon sushi/sashimi, mildly spicy Thai or Sichuan dishes, tempura, Cantonese roasted meats.
Production Method
Méthode traditionnelle rosé de saignée: 100% Pinot Noir, short maceration (~3 days), fermented mainly in stainless steel (some cuvées see oak), extended lees ageing (~12 years) before disgorgement.

Family-owned Maison based in Ambonnay (Grand Cru). Approximately 10–11 ha, third generation run by Valérie Soutiran and Patrick Renaux, concentrating on Pinot Noir and terroir expression.
