Tasting Note
Aromas of cherry, black cherry, dried fig, leather, tar, white pepper and porcini. Full-bodied with ripe acidity, firm chalky tannins, savory earth and a long, spice-driven finish.

Venison, roast beef, braised short rib, mushroom risotto, aged cheeses (Parmigiano-Reggiano); Asian: Peking duck, char siu, Korean bulgogi, miso-grilled eggplant, shiitake/soy braised dishes.

Production Method
Hand‑harvested Nebbiolo; spontaneous fermentation with extended maceration (~45 days); aged ~36 months in French oak (≈25% new); bottled unfined and unfiltered.

Vineyard Info
Family-run Azienda Agricola Sottimano of Neive (founded by Rino Sottimano); owns ~18 ha including crus Cottà and Pajorè. Practices organic viticulture; Riserva made from the oldest parcels in top sites, produced in limited quantities.
