Tasting Note
Perfumed Nebbiolo: violet, cherry and raspberry with baking spice, menthol, tobacco and iron-mineral notes. Bright acidity, silky yet firm, close‑grained tannins and a savory balsamic finish. Ageworthy and intensely perfumed.

Western: braised beef (brasato), osso buco, truffle or mushroom risotto, aged hard cheeses, lamb ragu. Asian: Peking duck, char siu, Korean BBQ (galbi), miso-glazed eggplant, shiitake/umami-rich Japanese dishes.
Production Method
Spontaneous fermentation with indigenous yeasts and long skin maceration (25–60+ days) including submerged cap; malolactic in French oak; aged ~20–24 months in mostly used French barrels; bottled unfined/unfiltered.
Vineyard Info
Family-owned Azienda Agricola Sottimano (Neive/Treiso). Rino and now Andrea Sottimano manage small, organically practiced parcels (including Pajorè); known for traditional Nebbiolo, low yields and long macerations.
