Tasting Note
Rose and violet florals with red cherry, plum, licorice, tobacco, mint and wild herbs. Precise acidity, fine-grained firm tannins, saline minerality and a long balsamic finish.

Production Method
Hand-harvested Nebbiolo; spontaneous fermentation with submerged cap and ~25-day maceration; malolactic in wood; aged 18–24 months in French oak (~15% new); bottled unfined; organically farmed.
Vineyard Info
Family-owned Azienda Agricola Sottimano (Neive), founded by Rino Sottimano in the late 1960s/1970s. Farms ~18–19 ha across five Barbaresco crus; Pajorè is the single-vineyard site in Treiso, farmed close-to-nature/organic.
