Tasting Note

Fragrant Nebbiolo: dried rose, red cherry and pomegranate with white pepper, menthol and slate. Bright acidity, fine chalky tannins, medium body and a long savory-mineral finish.

Western: braised beef, roasted lamb, mushroom risotto, aged pecorino or other hard cheeses. Asian: Peking duck, char siu, soy‑braised short ribs, Korean BBQ, umami mushroom stir‑fries.

Hand-harvested Nebbiolo; spontaneous (indigenous) fermentation with extended maceration and submerged cap; aged ~18–24 months in large oak casks/Burgundy barrels; minimal fining/filtration; organically farmed vineyards.

Family-run Sottimano (founded 1970s), ~18 ha across five Barbaresco crus. Fausoni is a south‑west-facing MGA in Neive; the estate has practiced organic viticulture for decades and emphasizes terroir-driven Nebbiolo.
