Tasting Note
Red cherry, wild rose, licorice, orange peel and baking spice with savory herbs, tar and minerality. Chalky, tightly woven tannins, bright acidity and a long, saline finish.

Western: roast lamb, braised beef, duck breast, truffle pasta, mushroom risotto. Asian: Peking duck, char siu, Korean bulgogi, savory mushroom hot-pot, spicy Sichuan beef.

Production Method
Spontaneous fermentation on indigenous yeasts; extended maceration (c.40–60 days) with submerged cap; malolactic in wood and aged ~20–24 months in large oak casks (botti), followed by bottle rest.

Sottimano is a family-run estate in Neive. Basarin is a 3-hectare cru of old Nebbiolo vines farmed organically/biodynamically; estate emphasizes traditional Piedmontese methods.
