Tasting Note
Perfumed Nebbiolo: dried cherries, wild strawberries, rose petal, tobacco, cedar, cinnamon and dark chocolate. Silky, persistent tannins, bright acidity and a long saline-mineral finish.

Western: roast beef, porcini mushroom risotto, aged cheeses, braised short ribs. Asian: Peking duck, char siu pork, Korean bulgogi, rich Indian dishes (tandoori), spicy Sichuan beef.
Production Method
Hand-harvested Nebbiolo from Basarin; destemmed, indigenous-yeast fermentation with extended maceration (up to 50–60 days), submerged cap techniques; aged ~24 months in large conical vats/large oak, minimal fining/filtration.

Family-run Sottimano estate (founded 1974) in Neive. Andrea Sottimano leads production; owns five Barbaresco crus including Basarin. Converted vineyards to organic/biodynamic practices with low yields and parcel-focused vinification.
