Tasting Note
Bright cherry color; floral and Mediterranean aromatic profile with red cherry, herbs and spice. Muscular, mineral and elegant palate with fresh acidity, gentle tannins and a persistent finish.
Food Pairing
Grilled/roasted white meats, lamb, charcuterie, tuna tartare, seared scallops, ceviche, grilled octopus (pulpo a la plancha/Gallega), arroz negro or seafood rice; also pairs with mildly spiced Asian dishes like Korean BBQ, teriyaki-glazed meats or mushroom ramen.
Production Method
Hand-harvested old-vine Garnacha. Spontaneous fermentation in concrete tanks (15% whole cluster), temperature-controlled 18–26°C; aged ~14 months in large oak tinos/foeders; single racking and one filtration before bottling.
Vineyard Info
Bodega Soto Manrique (Jesús María Soto) works old bush-trained Garnacha from Valverde/Cebreros at ~900–950m on poor granitic-sandy soils, focused on traditional viticulture and small-lot production.
