Tasting Note

Aromas of black cherry, plum, blackberry, violets, anise and baking spice. Silky entry with ripe plum, tart cherry and dark berry, savory chocolate and mineral notes, fine‑grained tannins and balanced acidity leading to a long, focused finish.

Western: roast duck, lamb, pork belly, mushroom risotto, grilled salmon. Asian: Peking duck, miso‑glazed salmon, teriyaki beef, char siu pork, Korean BBQ.

Hand‑harvested fruit from Gibbston; open‑top fermentations, barrel malolactic; aged ~10 months in French oak (≈28% new); bottled under screwcap.
