Tasting Note
Concentrated blackcurrant, blackberry and cassis with notes of dark chocolate, violets, spice, tobacco and sandalwood. Full-bodied, plush yet structured with ripe, persistent tannins and a long, perfumed finish.
Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ beef, beef bulgogi, miso-glazed or soy-braised dishes.
Production Method
Cold-soaked grapes; fermentation in tanks and barrels with extended maceration (45–60 days); significant barrel ferments; matured in French oak for extended élevage before bottling.
