Tasting Note

Concentrated blackcurrant, blackberry and plum with violet, cocoa, graphite and baking-spice notes; velvety, full-bodied texture, powerful tannins and long, menthol-tinged finish.


Food Pairing

Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar. Asian: Korean BBQ (bulgogi/galbi), char siu, Szechuan beef, hoisin-glazed Peking duck.


Production Method

Estate-grown hand‑harvested fruit; extended maceration (45–60 days), fermented in tanks and small fermenters, aged in French oak barrels (new and used).
