Tasting Note

Perfumed dark berry and blackcurrant with lavender, violet and oolong tea notes; blueberry, licorice, cedar and forest-floor undertones. Medium–full, mineral-driven palate with firm, grainy tannins and a long, savory finish.


Food Pairing

Western: roasted ribeye, braised short ribs, lamb shank, mushroom risotto, aged cheddar. Asian: Peking duck, Cantonese roast pork (char siu), Korean BBQ beef, beef rendang, Sichuan-style braised beef.


Production Method

Small-lot fermentations, meticulous sorting; matured in French oak barrels (extended élevage) to build structure and integrate tannins. Estate fruit managed by David Abreu; winemaking by Martha McClellan.
