Tasting Note
Perfumed and concentrated: wild black cherry, blackberry, violet, garrigue and spice with suggestions of tar, coffee and dark chocolate. Full-bodied, silky yet detailed tannins, lively acidity and a long, lifted floral finish.

Roasted lamb, herb-crusted ribeye, mushroom risotto, aged Manchego/Pecorino; Asian: Peking duck, char siu (barbecue pork), Korean BBQ short ribs (galbi), braised beef with soy and star anise.
Production Method
Fermented with ~35% whole clusters (primarily Grenache); matured ~23 months in various French oak (≈42% new), hand-harvested estate and contracted fruit, small-lot vinification.
