Tasting Note

Concentrated black‑currant and black cherry with cedar, tobacco, cocoa and savory shiitake/pu‑erh‑tea notes. Firm dusty tannins, mineral backbone and a long, smoky, savory finish.


Food Pairing

Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar or blue cheese. Asian: Peking duck, char siu, spicy Sichuan beef, braised mushroom hotpot, soy‑glazed pork.


Production Method

Hand‑harvested; cold maceration and temperature‑controlled fermentation; matured ~18 months in French oak (mix of new and one‑year barrels); traditional Bordeaux filtration.

Family-owned Silver Heights, founded 2007 by Gao Lin and Emma Gao (Bordeaux-trained). Focused on terroir-driven wines; converted to biodynamic farming and achieved Demeter certification.
