Tasting Note
Concentrated blackcurrant and black cherry with cassis, violet, cocoa and smoked-meat/black-tea savouriness. Firm dusty tannins, lively acidity and a long, savory finish with cedar and graphite notes.

Western: grilled ribeye, roast lamb, aged cheeses (Stilton, mature cheddar). Asian: Peking/roasted duck, Cantonese char siu, Sichuan twice-cooked pork, umami mushroom stir-fries.
Production Method
Hand-harvested grapes; cold maceration and temperature-controlled fermentation; aged ~18 months in 50% new French oak and 50% one-year-old French oak. Biodynamic/organic viticulture practices.
