Tasting Note

Deep black-fruit core of cassis and black plum with notes of cedar, black tea, cocoa and savory umami. Full-bodied, concentrated fruit framed by firm, polished tannins and a long, smoky finish.


Food Pairing

Western: grilled ribeye, braised lamb shank, roasted game, aged cheddar. Asian: Peking duck, Sichuan pepper beef, braised abalone with mushroom rice, umami-rich mushroom stir-fries.


Production Method

Hand-harvested, sorted, cold maceration and temperature-controlled fermentation; matured in French oak barrels (circa 12–18 months), minimal filtration, low-sulphur/biodynamic practices in the vineyard.
