Tasting Note
Bright red fruits—raspberry, cherry and cranberry—overlayed with sous-bois, mushroom, gentle cedar and baking spice. Silky tannins, lively acidity and a mineral-tinged, savory finish with subtle vanilla oak.

Western: roast chicken, mushroom risotto, grilled salmon, pork loin, charcuterie. Asian: Peking duck, tea‑smoked duck, soy‑braised pork belly, char siu, mushroom hotpot, light Sichuan or Cantonese dishes.

Production Method
Hand-harvested fruit; wild-yeast (natural) fermentation with minimal sulfur and no filtration. Aged 12–16 months in French oak (significant new oak) with occasional small-format/earthenware vessels.
