Tasting Note
Smoky, savoury red with blackberry and plum, licorice, cured‑meat and spice (white pepper, cumin); herbal shiso/spring‑onion lift, toasty oak and firm, muscular tannins.

Western: roast lamb, grilled beef, mushroom risotto, aged cheddar, charcuterie. Asian: tea‑smoked duck, Cantonese roast pork, spicy Sichuan beef, wok‑fried bok choy, soy‑braised chicken.

Production Method
Hand‑harvested, spontaneous (wild‑yeast) fermentation with minimal intervention; aged ~12 months in French oak (often new), lightly filtered, low SO2.
