Tasting Note
Wild cranberries, hawthorn and red‑date fruit with a green‑pepper lift; juicy, sweet‑sour midpalate, very soft tannins and lively natural acidity, finishing with a touch of white pepper. Medium-bodied and immediately drinkable.

Food Pairing
Western: grilled ribeye, roast lamb, beef stew, mushroom risotto. Asian: Korean BBQ, spicy Sichuan beef, char siu, braised lamb with cumin, bibimbap.

Production Method
Hand‑harvested Cabernet; fermented with indigenous (wild) yeasts, minimal sulphur and light filtration; aged ~10–12 months in neutral/used French oak with minimal intervention.
