Tasting Note
Blackcurrant, black cherry, cedar, dried herbs and graphite; ripe dark-fruit core with vanilla, espresso and subtle oak. Concentrated yet elegant with fine, polished tannins and a long spicy finish.
Food Pairing
Western: roast beef, grilled ribeye, roast lamb, mushroom risotto, aged cheddar. Asian: Peking duck, char siu (Cantonese BBQ pork), Sichuan spicy beef, braised pork belly, mushroom hotpot or stir-fried shiitake.
Production Method
Hand-harvested, cold maceration and temperature-controlled fermentation; aged ~12 months in French (c.20-30% new) oak barrels, minimal intervention and light filtration.
