Tasting Note

Deep ruby; concentrated blackcurrant, blackberry and black cherry with green bell pepper, sage and mint; clove, toast and vanilla from new oak. Full-bodied, fine-grained ripe tannins, lifted acidity and a long, smooth finish.

Western: grilled ribeye or lamb, braised short ribs, mushroom risotto. Asian: Peking duck, char siu (barbecued pork), Szechuan beef hotpot, beef ramen.


Production Method

Hand-harvested; cold maceration and temperature-controlled fermentation; aged ~24 months in small-format 100% new French oak; minimal filtration; organic/biodynamic practices.
