Tasting Note

Concentrated black and red fruits (cassis, black plum), coffee, cocoa, cedar and spice; full-bodied with rounded, fine-grained tannins, delicate acidity and a long, toasty oak-driven finish.

Western: aged Spanish ham, ribeye or côte de boeuf, grilled lamb chops, roasted mushrooms; Asian: Cantonese roast goose, Peking duck, Yunnan mushroom soup, Sichuan-style braised beef.


Production Method

Hand‑picked organically/biodynamically farmed fruit; cold maceration and temperature‑controlled fermentation; aged 24 months in 100% new French French oak barriques with lees racking and traditional Bordeaux-style filtration.
