Tasting Note
Pale straw with aromas of green apple, lemon, pineapple, white flowers and toasted oak. Creamy mid-palate, nutty lees complexity and bright, saline-mineral acidity finishing long and clean.

Food Pairing
Western: roasted shellfish, grilled lobster, roast chicken, creamy pasta, goat cheese. Asian: steamed fish with ginger & scallions, wok-fried bok choy, tea-smoked duck, dim sum, shrimp dumplings.

Production Method
Estate-grown Chardonnay; gentle pressing, barrel fermentation and 100% new French oak maturation (~8 months), native yeasts, lees contact; low-intervention/biodynamic practices.
