Tasting Note
Pear, white peach and melon with starfruit and citrus; toasted brioche, marzipan and cashew from new oak. Creamy mid-palate, bright saline acidity and a long, clean grapefruit-tinged finish.

Roasted chicken, grilled salmon, lobster or buttered crab, creamy pasta (carbonara); Asian: miso‑glazed black cod, soy‑ginger scallops, Cantonese roast pork, sushi with richer fish (e.g., toro).

Production Method
Hand-harvested; gentle slow pressing; indigenous-yeast, temperature-controlled fermentation; aged 8–9 months in 100% new French (Burgundian) oak barrels/puncheons; minimal filtration and sulphur.

Family-owned Silver Heights, founded by Emma Gao and her father in 2007 in Ningxia. Renowned for Burgundian-style wines; converted to organic/biodynamic practices and achieved Demeter certification in 2023.
