Tasting Note
Fragrant pét-nat: peach, Bosc pear, honeydew, banana flower and rose water with a toasted rice-husk savoury note. Energetic fine bubbles, bright acidity and a gentle off-dry finish with delicate spice and lingering cereal salinity.

Brunch and light pastries; oysters and smoked salmon; sushi/sashimi and tempura; dim sum (har gow), Cantonese roast pork (char siu), sesame noodles; spicy Southeast Asian dishes (Thai, Vietnamese) and Sichuan spicy preparations; grilled yakitori.
Production Method
Ancestral (pét-nat) bottle fermentation using indigenous yeasts. Chardonnay had extended skin maceration; component wines blended with a small amount of off-dry Ningxia rice wine to initiate secondary fermentation. Minimal intervention.
Vineyard Info
Silver Heights, founded 2007 by Emma Gao and Gao Lin on the Helan Mountain foothills (Ningxia). Estate practices organic and biodynamic viticulture (Demeter certified) with a low-intervention, terroir-driven approach.
