Tasting Note
Delicate pink‑orange pét‑nat: pink blossom, banana flower, honeydew, ripe pear/peach, toasted rice husk, light spice; small lively bubbles, bright acidity and a clean off‑dry finish.

Food Pairing
Western: brunch, smoked salmon, oysters, grilled prawns, roasted chicken, light charcuterie. Asian: dim sum (shrimp dumplings), sushi, yakitori, spicy Thai or Sichuan dishes, Cantonese roast pork, steamed fish with ginger and scallions.

Production Method
Pétillant‑naturel (ancestrale). Chardonnay and Pinot Noir fermented separately on indigenous yeasts (Chardonnay with extended maceration); blended with a small portion of off‑dry rice wine to trigger secondary in‑bottle fermentation; minimal sulfur, biodynamic farming.
