Tasting Note
Bright lemon-gold with citrus, white peach and stone-fruit notes, pronounced flinty minerality and saline character. Toasty vanilla and hazelnut from oak, creamy lees texture, full-bodied with vivid acidity and a long, saline finish.
Food Pairing
Western: salt-baked or grilled sea bass, roast chicken with lemon and herbs, smoked salmon, creamy goat cheese. Asian: sashimi/sushi, miso-glazed fish, grilled prawns with yuzu, lightly spiced Thai fish dishes.
Production Method
Cold maceration, partial fermentation transferred to 225L French oak (c.10–15% new), fermentation completed in barrel, 6–8 months on fine lees with occasional bâtonnage.
