Tasting Note

Earthy, umami-driven profile with baked apple, cereal and light lactic acidity; subtle woody/oxidative notes from barrel aging, medium body and a clean, slightly lingering finish.

Production Method

Edo‑style/kimoto (生もと) starter, brewed with kura‑native yeast, organic Kame‑no‑o rice, wooden‑barrel fermentation; unfiltered genshu with hi‑ire (pasteurization).

A collaboration release from the 'Musha Shugyo' series: Senkin Shuzo (Tochigi) produced the sake with brewer Hidehiko Matsumoto (formerly of Sawaya Matsumoto / Shuhari). Limited, small‑batch release.
