Tasting Note

Delicate floral and vanilla aromatics lead to a rich, umami-driven palate of cooked rice and orchard fruit. Slightly dry with bright acidity and a clean, moderate finish. Versatile served chilled or slightly warmed.

Shellfish and crab, prawn dishes, sea urchin, sashimi/sushi, grilled marlin, tempura, miso-glazed fish, creamy cheeses, roasted chicken, Asian pickles and marinated vegetables.


Production Method

Junmai Ginjo brewed from Gohyakumangoku rice (polish ~55%), handcrafted at Utsunomiya Brewery; bottled at 17% ABV. Created in collaboration with local rice farmer and female brewers.
