Tasting Note

Delicate, floral and rice-driven aroma with faint sweetness. Notes of white flowers, pear and melon, silky mouthfeel and a clean, refreshing finish.

Sushi and sashimi, fresh oysters, tempura, grilled white fish, lightly seasoned yakitori, nabe (hot pot), ceviche, steamed dim sum.


Production Method

High-polish Daiginjo using Yamada Nishiki (polished to ~35%), low-temperature ginjo-style fermentation; light addition of brewer’s alcohol may be used to enhance aroma and texture.
